
Velvety Roast Beetroot Soup
A bowl of deep ruby warmth, rich and velvety, that feels like a hug from the inside out. Each spoonful is a celebration of nature’s elegance — earthy sweetness from fresh beetroot, the gentle creaminess of floury potatoes, and the subtle, grounding spice of toasted cumin and a hint of chilli. A squeeze of fresh lemon lifts the flavours, while fragrant coriander adds a whisper of brightness that dances on the palate.

Ingredients

4 raw beetroot, whole

3 floury potatoes, peeled and halved

1 teaspoon toasted cumin powder

A splash of fresh lemon juice - to taste

Handful of fresh coriander

Pinch chilli (optional, to taste)

Sea salt

Water or vegetable stock, as needed

Greek or dairy free yogurt

Method

Pierce the beetroot skin a couple of times and roast whole in the oven at 180 degrees (fan oven) til there are bubbles under the skin and the flesh is tender. When cool enough to handle, peel (discard peel), roughly chop the flesh and tip into a blender.

Place potatoes in a pot with 1 litre water/stock if desired, bring to boil and simmer for 40 minutes til very soft. Do not drain. Tip into a blender.

Toast the cumin in a dry pan for a few minutes til aromatic. Tip into the blender.

Add chilli to blender if using.

Separate the coriander leaves from the stems. Roughly chop the stems and place in a blender.
Reserve the leaves for topping. -
Add the splash of lemon juice. Adjust to your taste.

Blend til silky smooth. Add more water to get the consistency you desire.

Top with a dollop of your chosen yogurt.

Sprinkle chopped coriander leaves.
